I call it Chinese Inspired because many of the ingredients are used in Chinese cuisine. Dried Pork Floss is originated in China. I super like it; it adds an interesting sweetness. But if you want it vegetarian, just leave it out. Without eggs you get a vegan version.

When you eat dried pork floss, you don’t immediately think of meat. It is super fluffy and slightly sweet in taste. In fact, the Chinese name for pork floss means 肉松 fluffy meat. Here, the pork, shoulder to be exact, is cooked in soy sauce and sugar and then shredded until it gets its typical fine texture. It is used as a topping for a wide variety of Asian dishes. Due to its slightly sweet taste, it goes well with savory but also sweet dishes. Try it on rice and tofu dishes, with savory soy milk or with congee (rice porridge). You can buy it in the Asian store.

Boil the rice (rice from the day before is also suitable). Wash and chop the vegetables. Grate the carrot.

Blanch broccoli in a little water. Fry the pak choi, mushrooms, carrot and spring onions in a little oil. Add a little bit of soy sauce or oyster sauce.

Push the vegetables a little to the side. Add the rice to the pan. Pour an egg over it and whisk it with the rice.

Pour the rice into small bowls as a base. Spread fried vegetables over the rice on the sides of the bowl.

Arrange cucumber slices, ginger and Chinese pork floss as well.

Cut avocado in half, remove fruit from peel and arrange slices on top of rice.

Fry two eggs as fried eggs and place on top of the bowl last.

  • 1 pak choi
  • 6 broccoli florets
  • 4 medium shiitake mushrooms (alternative: champignons)
  • 2 spring onions
  • 1 medium carrot
  • 8 cucumber slices
  • 1 avocado
  • 3 eggs
  • 2 tablespoons dried Chinese pork floss (Rousong or yuk sung)
  • 2 tablespoons pickled ginger
  • Some oil
  • A little soy sauce or oyster sauce to taste
