Garlic Parmesan Risotto – a classical Italian dish. Risotto, the famous Italian rice dish, is incredibly versatile. In Italian cuisine, risotto is served as the first main course (primo piatto) or as a side dish.
We share with you a simple basic recipe for a garlic parmesan risotto. This can be expanded with other ingredients as desired. Basically, all types of risotto have in common that chopped onions are sautéed in fat until translucent, then the dry rice is added. And freshly shredded Parmesan cheese may of course not be missing.

This creamy garlic parmesan risotto can be made as a vegetarian version, as described in the recipe, or you can add chicken or smoked sausage to make it a version with meat. This risotto can also be prepared well for a light lunch or for dinner. Especially if you serve it with some fresh bread or baguette.

Begin by heating your stock and keeping it warm.

Add butter and oil to a large skillet over medium heat.

Add the onions and cook until just tender, then add the garlic. Cook 1 minute longer.

Add the rice and toss to coat (making sure oil gets onto every grain of rice if you can).

Add the wine and stir until it is absorbed.

Add 1 ladle full of the stock and stir until it absorbs.

Repeat this until you have used almost all of the stock – it should take about 15-25 minutes.

When you add the last ladle of stock, also add the parsley, but only let the stock absorb halfway and then add your cheese.

Let it absorb until it is creamy and thick, but not soupy.

Serve, adding extra parmesan if desired.
