Autumn omelette with caramelized pumpkin, peppers and onion

Why not simply adapt the omlette for breakfast to the season? In the fall, of course, that means adding pumpkin. This can be used to create a wonderfully soft filling, which can be caramelized with maple syrup if you like. Combine with onions and peppers for a bit of bite. The three harmonize perfectly. To enhance the taste and emphasize the autumnal note, we recommend using Pumpkin Pie Spice.

Homemade hummus also goes well with this autumn omlette and goat or feta cheese.

Directions

Preheat the oven to 180 degrees Celsius (convection bake).

Cut some of the pumpkin into cubes and the pointed bell pepper and onion into strips.

Brush a small casserole dish with a little ghee, spread the pumpkin cubes and bell pepper strips in it and drizzle everything with a little maple syrup.
Place the casserole dish in the middle or upper part of the oven. Allow the vegetables to braise for approx. 20 minutes and caramelize slightly.

Fry the onion slices in a little ghee until they are soft and golden.

Prepare an omelette with two eggs and a little milk. Season with a little pumpkin pie spice. Salt and pepper to taste.

Top one half of the omelette with the vegetables and season with a little Pumpkin Pie Spice. It can also be filled with hummus, feta or goat cheese.

Fold the free half of the omelette onto the filled half.
